Dome (Gen 2) Neo Arch

The Dome (Gen 2) Neo Arch helps create the intense, heat-retaining environment needed for authentic Neapolitan-style pizza in the standard Gozney Dome (Gen 2). By reducing the size of the oven opening, the arch helps limit heat loss from the cooking chamber, keeping more of the intense upper heat around the pizza while the fully heated stone cooks the base from below.

Neapolitan pizza relies on very high temperatures and extremely short cooking times. Once the oven is fully heat saturated at approximately 450°C, the Neo Arch supports cooking times of approximately 45–60 seconds. This intense environment helps high-hydration dough expand rapidly, encouraging strong oven spring, a raised and airy cornicione, surface blistering and the distinctive leopard-style charring associated with traditional Neapolitan pizza. Actual cooking times will still vary depending on dough hydration, pizza thickness, flame intensity and topping quantity.

Designed specifically for the standard Dome (Gen 2), the Neo Arch is not compatible with the Dome XL (Gen 2), original Gozney Dome, Dome S1 or other Gozney oven models. While fitted, the reduced oven opening is designed for use with standard 12-inch pizza peels only, making it particularly well suited to traditional Neapolitan pizza sizing.

The Neo Arch is a purpose-built accessory for pizza makers who want greater control over the high-temperature environment inside their Dome Gen 2. It does not replace proper preheating or full stone saturation, but when used correctly it helps retain the intense ambient heat required for rapid rise, fast cooking and beautifully blistered crusts. Always install, adjust or remove the arch only when the oven is completely cold and follow Gozney's supplied instructions before use.
