Dough Tray

The Gozney Dough Tray provides a clean, organised and controlled space for resting, fermenting and proofing pizza dough. Designed to keep multiple dough balls together in one purpose-built system, it helps protect the dough from excessive airflow and moisture loss while making the proofing process easier to manage from mixing through to stretching.

An airtight gasket around the lid helps retain humidity inside the tray, reducing the risk of dough drying out or forming a skin during proofing and refrigeration. A built-in pressure-release valve helps manage the enclosed environment as fermentation progresses, while the integrated temperature dial lets you monitor internal conditions without turning the tray into an active heating or cooling system.

Inside, a removable non-stick silicone dough-ball holder keeps individual portions separated as they rise. The formed sections help dough balls retain their rounded shape and reduce the chance of neighbouring portions spreading into one another. When the dough is ready to use, the flexible silicone insert also makes it easier to lift each portion with less scraping or unnecessary handling.

A clear, thermal-resistant lid allows you to monitor dough development without repeatedly opening the tray and disturbing the internal environment. Measuring approximately 450mm long, 350mm wide and 80mm deep, the tray is designed to fit inside most household refrigerators for slower cold fermentation while keeping several dough balls organised in one place.

Whether you are proofing dough at room temperature or preparing it for refrigerated fermentation, the Gozney Dough Tray provides a practical way to keep dough protected, visible and easier to manage. Fermentation speed will still depend on your recipe, yeast quantity, proofing time and surrounding conditions.
