Balance Turning Peel

The Gozney Balance Turning Peel is designed to help you rotate, reposition and retrieve pizza with greater control while it cooks inside the oven. During high-temperature cooking, pizza usually needs to be turned several times so each section of the crust receives balanced exposure to the flame. The compact blade slides beneath the base while allowing the pizza to remain inside the cooking chamber, helping maintain oven heat throughout the cook.

Its approximately 203mm stainless-steel blade features a teardrop profile developed for smooth, responsive movement. The tapered front helps the peel move beneath the pizza, while the wider rear section provides support as the base is lifted and rotated. Pressed and welded construction creates a smooth working surface with fewer raised areas that could catch against soft dough or a cooked crust.

Perforations across the blade allow loose flour to fall away as the peel moves beneath the pizza. Reducing the amount of excess flour carried into a high-temperature oven can help limit burnt residue on the cooking stone, while the perforated design also reduces unnecessary blade weight. An FSC-certified beechwood handle provides a comfortable gripping surface and positions the tool's balance closer to the user's hand, helping the approximately 900mm-long peel remain responsive during quick adjustments.

The handle assembly also incorporates Ocean Bound Plastic Certified recycled-plastic moulding, while an integrated metal loop provides a convenient hanging point for storage. The Balance Turning Peel is primarily intended for rotating and repositioning pizza during cooking, although it can also assist with moving or retrieving smaller pizzas. For larger pizzas, a suitable placement peel may provide greater support when removing the finished pizza from the oven.
